Enchiladas
1 1/2 pounds ground beef
1 package taco seasoning
1 onion, chopped
1 clove garlic cut up
1 package shredded Cheddar cheese
1 package corn tortillas
Brown ground beef with 1/4 of the chopped onion and garlic; drain fat. Add taco seasoning, using as directed on package.
Heat tortillas in hot grease while meat is simmering. Heat each side for about 5 seconds. Do not over-heat or they will be too hard to roll.
Put meat mixture on the tortilla and roll up. You can add some extra chopped onion and cheese at the time you roll them up. Put rolled tortillas into a baking pan. Sprinkle any leftover meat mixture on top of the rolls. Sprinkle onions and cheese on top and bake at 350 degrees F for about 30 minutes or until bubbling and cheese is melted.

Coffee Roast
This recipe will make an inexpensive cut of meat as tender as a more expensive cut.
1 (4 to 8 pound) roast beef
1 onion, chopped
1 cup vinegar
1 cup strong coffee
1 cup water
Garlic
Make incisions clear through meat. Open up with finger and stuff each slit with onion and 1 clove garlic. Make as many incisions as the meat will take. Pour vinegar over the top of the roast. Cover and refrigerate overnight.
Preheat oven to 325 degrees F.
Put meat and liquid into a cast iron skillet, and sear until almost burnt. Add coffee and water. Cover and place in oven and bake until very tender. More water may be added if necessary.

Breakfast Burritos
1/2 pound bulk chorizo
1 green pepper, chopped
1/2 cup onion, chopped
2 large potatoes, grated or very finely diced
8 beaten eggs
8 (8-inch) flour tortillas
Melted butter
Grated cheese, if desired
Brown and drain chorizo. Reserve the drippings in the skillet. Add to the skillet green pepper, onion and potatoes. Cook until the potatoes are browned. Add eggs. Cook and stir until the eggs are firm, but moist. Wrap tortillas tightly in foil and bake at 350 degrees F for 15 minutes.
Spoon egg mixture into the center of each tortilla and roll up. Place in a greased 13 x 9-inch pan. Brush with melted butter. Cover with foil. Bake at 375 degrees F for 10 minutes. Sprinkle with cheese, if desired. Cover again and bake until the cheese melts.
Serve with warm salsa.
