1 (1 1/4 pound) top sirloin steak, cut 1-inch thick
1/3 cup bottled Italian dressing
3 tablespoons fresh lime juice
2 green or red bell peppers, each cut into quarters
2 medium onions, cut crosswise into 1/2-inch slices
8 medium flour tortillas, warmed
Prepared salsa
8 bamboo skewers
8 medium flour tortillas, warmed

Soak 8 (9-inch) bamboo skewers in water for 10 minutes; drain. Trim fat from steak. Cut steak crosswise into 1/2-inch thick strips. Thread an equal amount of beef, weaving back and forth onto each skewer.

In a small bowl, combine dressing and lime juice, mixing well. Brush onto beef, peppers and onions.

Place vegetables on grid over medium ash-covered coals. Grill peppers uncovered 12 to 15 minutes and onions 15 to 20 minutes or until tender, turning both once. Approximately 10 minutes before vegetables are done, move vegetables to outer edge of grid.

Place beef in center of grid and grill 8 to 12 minutes for medium rare to medium doneness, turning once. Season beef with salt as desired. Remove beef from skewers. Serve beef and vegetables in tortillas with salsa.

          Candy Bar Hot Chocolate

          2 egg yolks
          2 ounces milk chocolate candy bar with
              fine nuts (such as Toblerone)
          1 cup milk

          Beat the egg yolks in a small bowl; set aside.

          Coarsely chop chocolate and place in a 2-cup microwave-safe glass measuring cup with a spout. Add the milk. Place the measuring cup, uncovered, in the microwave. Whisking once or twice, cook on MEDIUM-HIGH (70 percent power) until chocolate is melted and well blended, 2 1/2 to 3 minutes. Remove the cup from microwave and slowly pour chocolate into the reserved egg yolks, whisking constantly. Return mixture to the measuring cup and cook in microwave until heated through, about 1 minute. You may need to rotate the measuring cup if your microwave doesn?t have a carousel.

          Pour into mugs and serve.

          Makes 2 servings.

          Milwaukee Pork Stew

          2 lb Boneless Pork, cubed

          All-Purpose Flour Salt Pepper 2 tb Oil

          4 Onions, sliced

          1 Clove Garlic, minced

          1/4 c Parsley, chopped

          1 t Caraway seed

          14 1/2 oz Chicken Stock

          12 oz Beer

          2 tb Red Wine Vinegar

          1 tb Brown Sugar

          Combine salt, pepper and flour. Dredge pork in flour mixture. Heat oil in deep skillet. rown pork; add onions and garlic; cook 5 minutes. Pour off any drippings. Stir in parsley, caraway seed, bay, stock, beer, vinegar and sugar. Cover and simmer for 1 1/4 hours, or until pork is very tender. Stir occasionally. Serving Suggestion: Serve with buttered noodles, rye bread, and cabbage slaw. Source: Pork, the Other White Meat

                Brigittes Real German Potato Salad

                8 Boiled and peeled potatoes,

                Cut into thin slices 1/2 Apple, finely diced

                1/2 Onion, finely diced

                2 tb Sweet relish

                1 ts Spicy mustard

                2 tb Pickle juice OR 1/2 tsp

                Vinegar and 1/2 tsp sugar 4 tb Heaping No Fat Miracle Whip

                Paprika, salt & pepper — to taste 4 Hard boiled eggs, diced

                1. Mix all ingredients together carefully, season to taste, garnish with

                  Sugar-Free Raisin Bars

                  1 cup raisins
                  1/2 cup water
                  1/4 cup margarine
                  1 teaspoon ground cinnamon
                  1/4 teaspoon nutmeg
                  1 cup all-purpose flour
                  1 egg, lightly beaten
                  3/4 cup unsweetened applesauce
                  1 tablespoon sugar substitute
                  1 teaspoon baking soda
                  1/4 teaspoon vanilla extract

                  In a saucepan, over medium heat, cook the first 5 ingredients until margarine is melted; continue cooking for 3 minutes. Add all remaining ingredients.

                  Spread into an 8-inch square baking dish that has been sprayed with nonstick cooking spray. Bake at 350 degrees F for 25 to 30 minutes or until lightly browned.

                  Nutritional Analysis: One serving equals 92 calories, 97 mg sodium, 13 mg cholesterol, 15 gm carbohydrate, 2 gm protein, 2 gm fat
