Chicken Tacos

1/4 cup green onion chopped
1 tablespoon shortening
2 cups shredded cooked chicken
1 (8 ounce) can green chile sauce
Salt to taste
Corn tortillas
1 cup Cheddar cheese, grated
1 cup chopped lettuce
1 cup chopped tomatoes
1 cup sour cream
1 cup guacamole

Saut? the onion in the shortening until transparent, add the chicken, green chile sauce and salt to taste.

To prepare the soft tortillas, pour oil into a pan and heat until water pops. Place the tortillas, one at a time, into the oil one at a time, flip over and place on a paper towel to drain. Put chicken into tortilla and top with cheese, lettuce, tomatoes, sour cream and guacamole.

Cheesy Apple Crisp

13 quarts apples (about 42 medium), peeled and sliced
2 cups water
1/4 cup plus 2 tablespoons lemon juice
8 cups all-purpose flour
8 cups granulated sugar
2 tablespoons cinnamon
1 tablespoons salt
4 cups butter or margarine
8 cups shredded Cheddar cheese
Whipped cream or ice cream (optional)

Preheat oven to 350 degrees F. Grease four 13 x 9 x 2-inch baking pans.

Arrange apples in prepared baking pans.

Combine water and lemon juice; sprinkle over apples.

Combine flour, sugar, cinnamon and salt; cut in butter until crumbly. Lightly stir in cheese. Spread over apples. Bake for 30-35 minutes, or until apples are tender and topping is crisp.

Serve with whipped cream or ice cream if desired.

2 pounds ground round
2 tablespoons oil
1 (14 ounce) can stewed tomatoes, cut up
6 ounces V-8 juice
1 (16 ounce) jar Prego spaghetti sauce
1 envelope onion soup mix
1/2 cup grape jelly

Brown meat in oil until pink color disappears. Crumble with fork. Stir in tomatoes, V-9 juice, Prego, soup mix and grape jelly. Cook, stirring often, 15 to 20 minutes or until jelly melts and sauce is piping hot.

Yields enough sauce for 6 to 8 servings.

Serves 6

Because the chocolate cakes need to freeze 24 hours before they can be baked, this dessert takes some advance planning.

Nuggets
5 ounces semisweet chocolate
1 cup heavy cream
1/4 cup (1/2 stick) butter
1/2 cup plus 2 tablespoons water

Chocolate Cake
2 eggs, separated
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup granulated sugar
4 ounces semisweet chocolate
3 tablespoons cake flour, sifted
3 tablespoons butter, at room temperature
3 tablespoons almond powder
6 tablespoons granulated sugar

Chocolate Sauce
5 tablespoons granulated sugar
7 tablespoons water
2 tablespoons cocoa powder
1/4 cup heavy cream
Confectioners sugar for dusting cakes

To make the nuggets: In a heavy-bottom saucepan melt the chocolate, cream, butter, and water over low heat. Mix gently until well combined and pour into a small ice cube tray. Freeze for 24 hours.

While the nuggets are freezing, proceed with the cake recipe and let the cake remain in the refrigerator until you are ready to complete the dessert.

To make the chocolate cake: Lightly butter and dust with flour six 4-ounce cupcake molds or cups in a muffin tin.

Separate the eggs. Place the egg whites, cream of tartar, and salt in the bowl of an electric mixer fitted with a balloon whip. On high speed whisk until soft peaks form. In a steady stream add the sugar and continue beating on high speed until stiff.

Melt the chocolate in the top of a double boiler over simmering water. While maintaining a very low heat, gradually add the cake flour, mixing until a paste is formed. Add the softened butter, mixing until it is well incorporated. Mix in the almond powder and sugar. Remove the pan from the heat and add the egg yolks. Gently fold in the egg whites, and set aside. The cake batter will be somewhat grainy. Fill the prepared molds with the cake batter. Place the frozen nuggets in the center of each mold (not the bottom) and let the molds rest in the freezer 24 hours before baking.

To make the chocolate sauce: In a medium saucepan combine the sugar, water, cocoa powder and cream, and simmer over low heat for 30 minutes. Remove the pan from the heat and transfer to a clean container. Cover and chill for 24 hours.

To assemble: Preheat the oven to 350 degrees F.

Place the cake molds in the upper third of the oven and bake for 15 minutes or until firm.

While the molds are baking, decorate individual dessert plates with the chocolate sauce. The chef likes to serve the sauce cold to contrast with the warm cakes but, if you prefer, the sauce may be warmed slowly over a low heat.

Remove the cakes from the oven and let cool on a rack. To remove the cakes from the molds, carefully run a sharp knife around the inner edge of the mold and invert onto dessert plates. Sprinkle with confectioners sugar.

4 chicken breast halves, skinned and de-boned
1/4 cup flour
1/4 cup butter or margarine
1/2 cup boiling water
1/8 teaspoon garlic powder
1 egg
3 tablespoons lemon juice
1/8 teaspoon paprika
2 teaspoons chicken bouillon granules (2 cubes)

Beat egg with 1 tablespoon lemon juice.

Combine flour, garlic powder and paprika. Dip chicken in egg mixture then in flour mixture.

In skillet, brown chicken in margarine or butter. Dissolve bouillon in boiling water; add with remaining lemon juice to skillet. Cover; simmer 20 minutes or until tender.

Makes 4 servings.

        2 boxes frozen broccoli, chopped,
            cooked and drained
        1/2 cup butter
        4 tablespoons flour
        4 chicken bouillon cubes
        2 cups milk

        Melt butter. Add crumbled bouillon cubes. Add flour with milk. Cook until thick.

        Dressing
        1/2 bag Pepperidge Farm ? stuffing crumbs
        1/2 cup boiling water
        2 tablespoons butter
        Nuts

        Put crumbs into a bowl. Melt butter in water. Pour over crumbs. Add a few nuts and toss with a fork. Put the broccoli in the bottom of a buttered dish. Pour cream sauce over. Spoon on stuffing. Sprinkle with more nuts. Bake, uncovered, at 350 degrees F for 30 minutes.

                1 1/2 pounds ground beef
                1 package taco seasoning
                1 onion, chopped
                1 clove garlic cut up
                1 package shredded Cheddar cheese
                1 package corn tortillas

                Brown ground beef with 1/4 of the chopped onion and garlic; drain fat. Add taco seasoning, using as directed on package.

                Heat tortillas in hot grease while meat is simmering. Heat each side for about 5 seconds. Do not over-heat or they will be too hard to roll.

                Put meat mixture on the tortilla and roll up. You can add some extra chopped onion and cheese at the time you roll them up. Put rolled tortillas into a baking pan. Sprinkle any leftover meat mixture on top of the rolls. Sprinkle onions and cheese on top and bake at 350 degrees F for about 30 minutes or until bubbling and cheese is melted.

                For the Ice Cream
                2 cups half-and-half or milk
                1 cup whipping cream
                2/3 cup granulated sugar
                1 vanilla bean
                7 egg yolks

                For that irresistible Nutty Buddy coating
                16 ounces semi-sweet chocolate
                2 cups shelled, unsalted peanuts
                8 waffle cones
                1 good buddy (to taste)

                Make the ice cream
                Slit vanilla bean lengthwise and scrape the seeds into a medium saucepan. Add the vanilla bean pod, half-and- half, cream and place over medium heat. Bring to a simmer and reduce the heat to low, stirring often.

                Combine the sugar and the egg yolks in a mixing bowl and whisk until very thick and pale, at least 3 minutes.

                Slowly whisk a cup or so of the hot cream mixture into the egg yolk mixture, then whisk the yolk mixture back into the saucepan as slowly as possible.

                Return the saucepan to a medium-low heat and cook, stirring constantly until the mixture thickens enough to coat the back of a spoon.

                Remove any lumps that might have formed by straining the hot custard through a fine strainer into a clean stainless steel bowl. Transfer any vanilla pods trapped in the strainer back into the custard. Place the bowl of custard into a larger bowl of ice water to chill the mixture as quickly as possible, stirring occasionally.

                Transfer the chilled mixture to your ice cream machine and freeze according to the manufacturers instructions. (Allow 30 to 40 minutes.)

                Ask your buddy nicely to crank the machine while you slowly melt the chocolate in a bowl over boiling water and chop the nuts. (Isn it great to have a best friend?)

                Once the ice cream is dense, creamy and silky smooth, drizzle a tablespoon of melted chocolate into each waffle cone followed by an extremely firm scoop of vanilla ice cream.

                Carefully dip each cone first into the melted chocolate; then immediately into the chopped peanuts. Repeat if desired.

                These nutty buddies will make you popular among your friends but, when its time to do the dishes, youll find out who your real buddies are.
